Ingredients
Scale
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1/4 cup olive oil
3 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice
1 tablespoon butter
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Prep the Chicken: Start by placing the chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound them to about 1/2 inch thick.
Season Up: Sprinkle both sides of the chicken with salt and pepper.
Dredge the Chicken: Set up your dredging station. In one bowl, add the flour. In another, whisk together the eggs. Dip each chicken breast first into the flour, then into the egg mixture.
Heat the Oil: In a large skillet over medium heat, add olive oil. Let it heat until shimmering.
Cook the Chicken: Add the chicken to the skillet in a single layer. Cook for about 5-6 minutes on each side until golden brown and cooked through. Remove and keep warm.
Make the Sauce: In the same skillet, reduce the heat to low, add minced garlic and sauté for about 30 seconds. Pour in the chicken broth and lemon juice, scraping up any brown bits.
Finish the Sauce: Stir in the butter until melted and the sauce thickens slightly. Adjust salt, pepper, and lemon to your preference.
Combine: Return the chicken to the skillet and spoon the sauce over it.
Serve: Plate the Chicken Francese, drizzle more sauce on top, and garnish with fresh parsley.
