4 salmon fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
2 cloves garlic, minced

1 cup cherry tomatoes, halved
1 cup zucchini, sliced

Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Whisk until blended.
Place the salmon fillets in a large baking dish and pour the marinade over them. Let them marinate for about 15 minutes.
