1/4 cup olive oil
Juice and zest of 1 lemon
2 tablespoons fresh oregano, chopped

Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the olive oil, lemon juice, zest, oregano, salt, and pepper. Add the chicken thighs and massage them until well-coated. Let sit for about 15 minutes.
On a large baking sheet, toss the halved baby potatoes, bell pepper strips, and onion wedges with a drizzle of olive oil, salt, and pepper. Spread them out in an even layer.
Nestle the marinated chicken thighs skin-side up among the veggies.
Bake for about 35-40 minutes, or until the chicken's internal temperature reaches 165°F (75°C) and the skin is golden brown. Optionally, broil for the last 2-3 minutes for extra crispiness.
Once done, let the chicken rest for five minutes. Sprinkle with fresh parsley or feta before serving.
