  • 500 grams of ground beef
  • 1 medium onion, finely chopped
  • 1/2 cup of panko breadcrumbs
  • 1/4 cup of milk
  • 1 large egg
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • 2 tablespoons of butter
  • 1 clove of garlic, minced (optional)
  • Spring onions for garnish (optional)
  • Shredded cabbage for serving
  • Parsley or chives for garnish

  • Instructions

  • In a frying pan, melt a tablespoon of butter over low heat. Sauté the chopped onion until it's translucent and sweet, about 5 minutes. Set aside to cool a bit.
  • In a large bowl, combine the ground beef, cooked onions, panko breadcrumbs, milk, egg, soy sauce, salt, and pepper. Use your hands to mix gently.
  • With slightly wet hands, form the mixture into oval-shaped patties.
  • In a skillet, melt the remaining butter. Carefully add the patties and cook over medium heat, about 4–5 minutes on each side until golden brown.
  • After removing the patties, add a splash of water or beef broth to the pan to deglaze. Scrape up the browned bits, add soy sauce and sugar or mirin, let it simmer until thickened.
  • Place the patties on a plate, pour the gravy over the top, and serve with shredded cabbage and garnishes.
