500 grams of ground beef
1 medium onion, finely chopped
1/2 cup of panko breadcrumbs
1/4 cup of milk
1 large egg
1 tablespoon of soy sauce
Salt and pepper to taste
2 tablespoons of butter
1 clove of garlic, minced (optional)
Spring onions for garnish (optional)
Shredded cabbage for serving
Parsley or chives for garnish
Instructions
In a frying pan, melt a tablespoon of butter over low heat. Sauté the chopped onion until it's translucent and sweet, about 5 minutes. Set aside to cool a bit.
In a large bowl, combine the ground beef, cooked onions, panko breadcrumbs, milk, egg, soy sauce, salt, and pepper. Use your hands to mix gently.
With slightly wet hands, form the mixture into oval-shaped patties.
In a skillet, melt the remaining butter. Carefully add the patties and cook over medium heat, about 4–5 minutes on each side until golden brown.
After removing the patties, add a splash of water or beef broth to the pan to deglaze. Scrape up the browned bits, add soy sauce and sugar or mirin, let it simmer until thickened.
Place the patties on a plate, pour the gravy over the top, and serve with shredded cabbage and garnishes.
