1 sheet of puff pastry
8 oz of mushrooms (cremini or button)
2 medium shallots
4 oz of herbed goat cheese
2 tbsp of olive oil
Salt and pepper to taste
1 egg, beaten
Instructions
Preheat your oven to 400°F (200°C). Clean and slice the mushrooms; dice the shallots.
In a medium skillet, heat the olive oil over medium heat. Add the shallots and caramelize for 3-4 minutes. Then add the mushrooms, sprinkle with salt and pepper, and cook until soft.
Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into squares or circles about 4-5 inches in size.
Line a baking sheet with parchment paper, place the pastry pieces on top, poke holes in the center, and leave a border for the crust. Spread herbed goat cheese on the center, then top with sautéed mushrooms and shallots.
Brush the edges of the pastry with the beaten egg.
Bake in the oven for 15-20 minutes until golden brown.
Allow to cool, garnish with fresh herbs or balsamic reduction, serve warm.
