Ingredients

  • 912 sheets of lasagna noodles
  • 15 oz of ricotta cheese
  • 2 cups of shredded mozzarella cheese
  • 4 cups of fresh spinach, chopped
  • 1 cup of pesto
  • ½ cup of grated Parmesan cheese
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • If using traditional lasagna noodles, cook according to package directions until al dente.
  • In a mixing bowl, combine ricotta cheese, half the mozzarella, and half the Parmesan. Add salt and pepper and mix well.
  • Gently fold in the chopped spinach.
  • Spread a thin layer of pesto at the bottom of your baking dish. Place your first layer of noodles on top, followed by half of the ricotta-spinach mixture, a sprinkle of mozzarella, and a drizzle of pesto. Repeat layers until all ingredients are used, ending with noodles topped with remaining mozzarella and Parmesan.
  • Cover with aluminum foil and bake for about 30 minutes.
  • Remove foil and bake for another 15-20 minutes until cheese is bubbly and golden.
  • Let cool for 10 minutes before serving.
