1 ½ pounds flank steak
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
½ teaspoon garlic powder
Salt and pepper to taste
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
8–10 tortillas
Optional: Jalapeños, black beans, fresh corn

Instructions
Preheat the oven to 425°F (220°C).
In a bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper. Toss the flank steak to coat and let marinate for 15-30 minutes.
Slice the bell peppers and onion into thin strips.
On a large sheet pan, lay the marinated beef in the center and scatter the sliced peppers and onions around it.
Roast for 20-25 minutes, tossing halfway through for even cooking.
Let the beef rest for a few minutes, slice against the grain, and serve with tortillas and garnishes.
