Ingredients

  • 1 ½ pounds flank steak
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 810 tortillas
  • Optional: Jalapeños, black beans, fresh corn
  • Special garnishes: Chopped fresh cilantro, diced avocados or guacamole, fresh lime wedges

  • Instructions

  • Preheat the oven to 425°F (220°C).
  • In a bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper. Toss the flank steak to coat and let marinate for 15-30 minutes.
  • Slice the bell peppers and onion into thin strips.
  • On a large sheet pan, lay the marinated beef in the center and scatter the sliced peppers and onions around it.
  • Roast for 20-25 minutes, tossing halfway through for even cooking.
  • Let the beef rest for a few minutes, slice against the grain, and serve with tortillas and garnishes.
