2 cups cooked shredded chicken
1 (4 oz) can diced green chiles
1 cup shredded cheese (like Monterey Jack or Cheddar)
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon chili powder
12–14 corn tortillas
Cooking spray or olive oil
Optional: 1/2 cup black beans, chopped jalapeños, cilantro
Special garnishes: Sour cream or Greek yogurt, fresh avocado slices, salsa or pico de gallo
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the shredded chicken, diced green chiles, shredded cheese, garlic powder, cumin, and chili powder. Mix until well combined.
Warm tortillas in the microwave for about 30 seconds to make them pliable.
Take a tortilla, spoon a generous amount of filling onto one side, roll it tightly, and place seam-side down on a lined baking sheet. Repeat with remaining tortillas and filling.
Lightly spray the taquitos with cooking spray or drizzle with olive oil.
