4 pieces of salmon fillets (about 6 ounces each)
1 lb of baby potatoes (halved)
3 tablespoons of olive oil
Salt and pepper to taste
2 sprigs of fresh rosemary (chopped)
1 lime (juiced and zested)
1 orange (juiced and zested)
1 avocado (diced)
1/4 of a red onion (finely chopped)
1/4 cup of cilantro (chopped)
Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or aluminum foil.
Toss the halved baby potatoes in a bowl with 2 tablespoons of olive oil, salt, and pepper. Spread them out on one side of the baking sheet.
Place the baking sheet in the preheated oven and roast the potatoes for about 15 minutes.
While the potatoes are roasting, season the salmon fillets with salt, pepper, rosemary, and drizzle with the remaining tablespoon of olive oil.
Take the sheet out after 15 minutes and gently nestle the salmon fillets between the potatoes. Return them to the oven and roast for an additional 12-15 minutes or until the salmon flakes easily with a fork.
While the salmon and potatoes are cooking, mix together avocado, lime juice, orange juice, zest, red onion, and cilantro in a medium bowl. Season with salt to taste.
Once the salmon and potatoes are done, remove them from the oven, plate them up, and top the salmon with the citrus avocado salsa.
