Ingredients

1 lb. sausage (your choice – chicken, pork, or plant-based)
2 cups sweet potatoes, diced
1 red bell pepper, sliced
1 yellow onion, sliced
2 tbsp olive oil
Salt and pepper, to taste
¼ cup maple syrup
2 tbsp Dijon mustard
Instructions
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper.
In a large bowl, combine the diced sweet potatoes, sliced bell pepper, and onion. Drizzle with olive oil, and sprinkle with salt and pepper. Toss everything together.
Add in your sausage—sliced or whole, depending on your preference. Mix it all up again to coat everything evenly.
Dump everything onto your prepared baking sheet and spread it out into a single layer.
Roast in your preheated oven for 20 minutes, stirring halfway through.
Whisk together the maple syrup and Dijon mustard in a small bowl. Drizzle the sauce over the roasted sausage and veggies and toss to combine.
Return to the oven for another 10-15 minutes, or until the sausages are browned and cooked through.
Remove from the oven and let it cool for just a minute before serving. Garnish with chopped parsley if you like.
