1 pound of boneless, skinless chicken breast, cut into 1-inch cubes
1 bell pepper (any color), cut into 1-inch pieces
1 zucchini, sliced into thick rounds
1 red onion, cut into wedges
1 cup cherry tomatoes
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon dried oregano
Salt and pepper to taste
Skewers (wooden or metal)
Instructions
In a medium mixing bowl, combine the olive oil, soy sauce, lemon juice, minced garlic, oregano, salt, and pepper. Whisk well to blend.
Place the chicken cubes in a resealable plastic bag or glass dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
If using wooden skewers, soak them in water for about 30 minutes before grilling.
Thread the marinated chicken, bell pepper, zucchini, red onion, and cherry tomatoes onto the skewers, alternating ingredients for better presentation.
