1 bunch Asparagus
8 ounces Mushrooms
3 cloves Garlic
1 tablespoon Fresh Ginger, grated
3 tablespoons Soy Sauce
1 tablespoon Sesame Oil
Green Onions for garnish
Instructions
Prepare the Ingredients: If using frozen shrimp, thaw them underwater. Clean and chop the asparagus into bite-sized pieces. Slice the mushrooms and mince garlic and ginger.
Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Ensure the pan is hot enough for a good sizzle.
Cook the Shrimp: Add the shrimp to the hot oil, cooking for about 2-3 minutes until they turn pink and opaque. Stir frequently and remove the shrimp from the pan once done.
Stir-Fry the Vegetables: In the same pan, add a little more sesame oil if needed. Toss in minced garlic and grated ginger, cooking until fragrant (about 30 seconds). Follow with asparagus and mushrooms—cook until asparagus is tender-crisp, around 4-5 minutes.
Combine and Season: Return the shrimp to the pan with the vegetables. Pour in soy sauce, stirring to coat everything well. Cook for another 1-2 minutes to heat through. Remove from heat.
Garnish: Serve hot, garnished with green onions and optional sesame seeds.
