1 pound of shrimp (peeled and deveined)
1 cup fresh parsley (chopped)
1/4 cup fresh cilantro (chopped)
3–4 cloves garlic (minced)
1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon red pepper flakes
Salt and pepper to taste
Instructions
In a medium-sized bowl, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, salt, and pepper.
Slowly whisk in olive oil until all ingredients are well combined. Taste and adjust seasoning if needed.
Place shrimp in a large bowl or dish and pour 1/2 of the chimichurri sauce over them. Toss to coat the shrimp thoroughly.
Cover and marinate in the fridge for at least 30 minutes, allowing the flavors to meld together.
Preheat your grill or skillet over medium-high heat. Skewering the shrimp makes for easy grilling, but it’s not necessary.
Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.
Remove from the heat and drizzle the remaining chimichurri sauce over the cooked shrimp. Serve immediately, garnished with fresh herbs and any additional garnishes you prefer.
