- 1 pound of shrimp
- 1 cup of orzo
- 4 cloves of garlic, minced
- Juice of 2 lemons
- 1/4 cup of olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped
Instructions
- Cook the orzo in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Toss in the shrimp and season with salt and pepper. Cook for about 3-4 minutes or until the shrimp turn pink and opaque.
- Pour in the lemon juice and stir to combine. Allow it to cook for an additional minute.
- Add the cooked orzo to the skillet, tossing gently to combine all ingredients.
