  • 1 lb. large shrimp, peeled and deveined
  • 8 oz. linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Juice and zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

  • Instructions

  • Start by bringing a large pot of salted water to a boil. Once boiling, add your pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta.
  • While your pasta is cooking, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  • Add the minced garlic and red pepper flakes to the skillet. Stir often to avoid burning the garlic, cooking until fragrant.
  • Next, add the shrimp to the skillet. Cook for about 2-3 minutes on one side until they turn pink, then flip them over and cook for another 1-2 minutes.
  • Pour in the reserved pasta cooking water and add the remaining 2 tablespoons of butter, lemon juice, and zest. Stir everything together.
  • Add the cooked pasta to the skillet and toss everything together until coated. Remove from heat, then stir in the fresh parsley, salt, and pepper to taste.
  • Serve immediately with a sprinkle of extra parsley and a wedge or two of lemon.
