1 lb. large shrimp, peeled and deveined
8 oz. linguine or spaghetti
4 tablespoons unsalted butter
3 tablespoons olive oil
4 cloves garlic, minced
1/4 teaspoon red pepper flakes
Juice and zest of 1 lemon
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
Instructions
Start by bringing a large pot of salted water to a boil. Once boiling, add your pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta.
While your pasta is cooking, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
Add the minced garlic and red pepper flakes to the skillet. Stir often to avoid burning the garlic, cooking until fragrant.
Next, add the shrimp to the skillet. Cook for about 2-3 minutes on one side until they turn pink, then flip them over and cook for another 1-2 minutes.
Pour in the reserved pasta cooking water and add the remaining 2 tablespoons of butter, lemon juice, and zest. Stir everything together.
Add the cooked pasta to the skillet and toss everything together until coated. Remove from heat, then stir in the fresh parsley, salt, and pepper to taste.
Serve immediately with a sprinkle of extra parsley and a wedge or two of lemon.
