1 large onion, diced
2 cloves of garlic, minced
1 bell pepper, diced
2 cans (15 oz each) of kidney beans, rinsed and drained
2 cans (15 oz each) of diced tomatoes
1 can (15 oz) of corn, drained
2 tablespoons of chili powder
1 teaspoon of cumin
Salt and pepper, to taste
Instructions
Prep your ingredients: Dice the onion, garlic, and bell pepper. Rinse those beans and drain the corn.
Heat the olive oil: In a pan over medium heat, sauté the onions and garlic for about 5 minutes.
Add everything to the crockpot: Transfer the sautéed onions and garlic to the crockpot, and toss in the bell pepper, kidney beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
Set it and forget it: Cover the crockpot and cook on low for about 6-8 hours or high for 3-4 hours.
