1 pound boneless, skinless chicken breasts
2 tablespoons olive oil
1 cup chopped onions
2 cloves garlic, minced
2 cups mixed vegetables (carrots, peas, corn)
1/4 cup flour
2 cups chicken broth
1 teaspoon dried thyme
Salt and pepper to taste
1 can (16.3 oz) refrigerated biscuit dough
Instructions
Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for about 6-7 minutes on each side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and let it rest before chopping into bite-sized pieces.
Sauté the Aromatics: In the same skillet, add the chopped onions and minced garlic. Sauté for 2-3 minutes until the onions are translucent and fragrant.
Add Vegetables: Stir in the mixed vegetables and cook for an additional 3-4 minutes until they are heated through and slightly tender.
Make the Sauce: Sprinkle the flour over the vegetable mixture and stir to combine. Gradually add the chicken broth while stirring continuously to avoid lumps. Bring the mixture to a simmer; it will start to thicken. Add the thyme, and check for seasoning, adjusting salt and pepper as needed.
Combine Ingredients: Return the chopped chicken to the skillet, stirring until everything is well-coated in the creamy sauce.
Add Biscuit Topping: Preheat your oven to 375°F (190°C). Remove the skillet from heat. Open the can of biscuit dough and evenly place the biscuits over the chicken filling. Leave space between each biscuit as they will puff up while baking.
