Ingredients

  • 4 ears of fresh corn or 2 cups of frozen corn
  • 3 tablespoons mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Optional: 1 diced jalapeño or red pepper flakes for spice, Greek yogurt instead of mayonnaise, grilled shrimp or chicken for protein

  • Instructions

  • Remove the kernels from the corn if using fresh corn. Slice downward with a sharp knife to extract the kernels.
  • In a large skillet over medium-high heat, add the corn (fresh or frozen) and sauté for about 5-7 minutes until heated and slightly charred.
  • Add the mayonnaise, lime juice, chili powder, and a pinch of salt and pepper into the skillet. Mix well until each kernel is coated.
  • Remove from heat and stir in the cotija cheese and cilantro.
  • Transfer to a serving bowl and garnish with more cotija cheese, chili powder, and lime wedges.
