Description
Savor the ultimate comfort of slow cooker beef noodles with our easy delicious recipe Perfect for a cozy meal any day.
Ingredients
Scale
- 2 lbs beef chuck roast
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 tablespoon cornstarch (optional)
- 12 oz egg noodles
Instructions
- Prepare the Beef: Start by trimming any excess fat from the beef chuck roast. Cut it into large chunks, about 2-3 inches each, for even cooking.
- Season and Sear: In a large skillet over medium heat, add a bit of oil and sear the beef chunks on all sides until they develop a nice brown crust. This step is optional but adds depth to the flavor.
- Add to the Slow Cooker: Place the seared beef into the slow cooker. If you skipped the searing, simply add the raw chunks to the cooker.
- Add Vegetables: Scatter the diced onions and minced garlic over the beef.
- Add Liquids: Pour the beef broth and Worcestershire sauce over the beef and vegetables. Add the dried thyme, salt, and pepper to taste.
- Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 4-5 hours, until the beef is tender.
- Prepare the Noodles: About 30 minutes before serving, cook the egg noodles according to the package instructions. Drain and set aside.
- Thicken the Gravy (optional): If you prefer a thicker gravy, mix the cornstarch with a bit of cold water to create a slurry. Stir it into the beef broth in the slow cooker and allow it to cook an additional 15-20 minutes on high.
- Combine: Once the beef is fork-tender, add the cooked noodles to the slow cooker, gently stirring to combine.
- Serve: Ladle the beef and noodles into bowls, garnishing with your choice of fresh herbs or cheese.
