  • 34 lbs Beef Chuck Roast
  • 1 large Onion, diced
  • 2 cups Carrots, sliced
  • 4 cloves Garlic, minced
  • 2 cups Beef Broth
  • 2 tbsp Worcestershire Sauce
  • Salt & Pepper to taste
  • 1 tsp Thyme, dried
  • Mashed Potatoes or Bread for serving
  • Optional: Red Pepper Flakes, Peas, Fresh Herbs

Instructions

  • Prepare the beef by seasoning it with salt and pepper on both sides.
  • Sear the meat in a skillet over medium-high heat for 3-4 minutes on each side until browned.
  • Place the seared beef in the slow cooker, followed by diced onions, carrots, and garlic.
  • In a separate bowl, combine beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir well and pour over the beef and vegetables.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
  • Remove the beef from the slow cooker, shred it, and return it to the pot.
  • To thicken the gravy (optional), mix a tablespoon of cornstarch with two tablespoons of water, stir into the slow cooker, and cook for an additional 30 minutes.
  • Serve the beef over mashed potatoes or toasted bread and garnish with toppings.
