- 3–4 lbs Beef Chuck Roast
- 1 large Onion, diced
- 2 cups Carrots, sliced
- 4 cloves Garlic, minced
- 2 cups Beef Broth
- 2 tbsp Worcestershire Sauce
- Salt & Pepper to taste
- 1 tsp Thyme, dried
- Mashed Potatoes or Bread for serving
- Optional: Red Pepper Flakes, Peas, Fresh Herbs
Instructions
- Prepare the beef by seasoning it with salt and pepper on both sides.
- Sear the meat in a skillet over medium-high heat for 3-4 minutes on each side until browned.
- Place the seared beef in the slow cooker, followed by diced onions, carrots, and garlic.
- In a separate bowl, combine beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir well and pour over the beef and vegetables.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
- Remove the beef from the slow cooker, shred it, and return it to the pot.
- To thicken the gravy (optional), mix a tablespoon of cornstarch with two tablespoons of water, stir into the slow cooker, and cook for an additional 30 minutes.
- Serve the beef over mashed potatoes or toasted bread and garnish with toppings.
