Description
Savor a delicious slow cooker beef roast paired with tender carrots and potatoes. Perfect for a hearty family meal or cozy gathering. Enjoy!
Ingredients
Scale
3–4 pounds of beef chuck roast
4 carrots, chopped
4–5 medium potatoes, quartered
1 onion, chopped
4 cloves of garlic, minced
2–3 cups of beef broth
1 tablespoon of Worcestershire sauce
Salt and pepper, to taste
Fresh herbs (like rosemary or thyme)
Instructions
Prepare the vegetables: Chop your carrots, potatoes, and onion. Make sure they’re all relatively the same size, so they cook evenly. The garlic? Just mince that bad boy!
Sear the beef (optional): If you have a few extra minutes, sear the beef chuck roast in a hot pan for about 3-5 minutes on each side until it's brown all over.
Layer it up: In your slow cooker, add the chopped onions at the bottom, followed by the carrots and potatoes. Put the seared (or raw) beef on top.
Add broth and spices: Pour the beef broth and Worcestershire sauce over everything. Toss in your garlic, salt, pepper, and any herbs you wish to sprinkle on.
Cook low and slow: Cover and set your slow cooker on low for 8-10 hours or high for 4-6 hours.
Check for doneness: About 30 minutes before serving, check the beef. It should shred easily with a fork when done.
Serve it up: After cooking, let it rest for a few minutes before slicing. Serve the roast alongside the tender veggies and drizzle some of that glorious broth over everything!
