  • 2 pounds of beef chuck roast
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of beef broth
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of Worcestershire sauce
  • 1 cup of mushrooms, sliced (optional)
  • 1 cup of frozen peas (optional)
  • 1 cup of red wine (optional)

  • Instructions

  • Start by prepping your beef. Cut it into chunks, about 1.5 inches. Make sure to trim any excess fat, though don't go overboard—some fat adds flavor.
  • In a large skillet over medium-high heat, add the olive oil. Sear the beef chunks for about 3-4 minutes per side until they’re a beautiful golden brown. Don’t rush this step; it’s where the magic happens!
  • Once browned, transfer the beef to your slow cooker. Add in the chopped onions, minced garlic, carrots, and potatoes.
  • In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables.
  • Cover and set your slow cooker to low. Let it cook for 6-8 hours, or until the beef is fork-tender.
  • Around the last hour of cooking, if you’re adding peas or mushrooms, toss them in now.
  • Once it’s done cooking, taste and adjust the seasoning as needed. Serve in bowls, garnish with fresh parsley.
