Ingredients
Scale
2 lbs boneless chicken thighs
½ cup honey
⅓ cup soy sauce
¼ cup rice vinegar
2 tablespoons sesame oil
3 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons cornstarch (optional)
Sesame seeds for garnish
Chopped green onions for garnish
Instructions
Trim any excess fat from the chicken thighs and place them in the slow cooker.
In a bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, and ginger until well combined.
Pour the sauce over the chicken thighs in the slow cooker, ensuring they are evenly coated.
Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
If you want a thicker glaze, combine the cornstarch with a little water to form a slurry. Add it to the slow cooker about 30 minutes before serving, stirring well.
Once cooked, shred the chicken using two forks and return it to the sauce. Mix well and serve over rice, garnishing with sesame seeds and green onions.
