Ingredients
Scale
3–4 pounds of beef chuck roast
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 cups beef broth
1 cup onion, sliced
1 cup carrots, sliced
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch
Instructions
Prepare the beef: Pat the beef chuck roast dry with paper towels and season generously with salt, pepper, garlic powder, and onion powder.
Brown the roast (optional): Heat some oil in a skillet over medium-high heat. Sear the meat on all sides until it’s nice and brown.
Load the slow cooker: Place the beef in the slow cooker, and scatter the sliced onions and carrots around it.
Mix the broth: In a separate bowl, whisk together the beef broth and Worcestershire sauce. Pour this mixture over the beef and veggies.
Set it and forget it: Cover the slow cooker and set it to low for about 8 hours or high for 4 hours.
Make the gravy: Once the cooking time is up, remove the beef and let it rest on a cutting board. Pour the remaining juices into a saucepan and create a slurry with the cornstarch and a bit of water. Heat and stir until the gravy thickens.
Serve: Slice the roast beef and drizzle the gravy over it. Garnish with fresh herbs and serve.
