4 boneless, skinless chicken breasts
2 cups corn (fresh, frozen, or canned)
1 cup chicken broth
1 tablespoon taco seasoning
1/2 cup cream cheese
1/2 cup crumbled feta or cotija cheese
Juice of 1 lime
Optional: cayenne pepper or diced jalapeños, black beans or bell peppers
Garnish: fresh cilantro, lime wedges
Instructions
Prepare the Chicken: Place the chicken breasts at the bottom of the slow cooker.
Add the Corn: Evenly distribute the corn over the chicken. If using frozen corn, there’s no need to thaw it first.
Pour the Broth: Add the chicken broth and taco seasoning to the slow cooker. Give everything a gentle stir to combine.
Set the Cook Time: Cover and cook on low for 6-8 hours or high for 4 hours, until the chicken is tender and easily shredded.
Mix in Cream Cheese: During the last 30 minutes of cooking, add the cream cheese and let it melt into the mixture for a creamy texture.
