- 1 lb ground beef or turkey
- 1 can (15 oz) black beans
- 1 can (15 oz) diced tomatoes
- 1 cup corn (frozen or canned)
- 1 bell pepper (diced)
- 1 onion (diced)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 2 tablespoons taco seasoning
- Salt and pepper (to taste)
- Tortilla chips (optional)
Instructions
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat and set aside.
- In your slow cooker, layer the ingredients. Start with the meat on the bottom.
- Add the black beans, diced tomatoes, corn, bell pepper, onion, and taco seasoning on top of the meat. Stir gently to combine.
- Sprinkle one sturdy cup of shredded cheese on top of the veggie mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the remaining cheese on top.
- Once done, scoop out generous portions into bowls and garnish with your choice of toppings.
