Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons taco seasoning
  • Salt and pepper (to taste)
  • Tortilla chips (optional)

Instructions

  • In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat and set aside.
  • In your slow cooker, layer the ingredients. Start with the meat on the bottom.
  • Add the black beans, diced tomatoes, corn, bell pepper, onion, and taco seasoning on top of the meat. Stir gently to combine.
  • Sprinkle one sturdy cup of shredded cheese on top of the veggie mixture.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the remaining cheese on top.
