Ingredients

200 grams of spaghetti
150 grams of smoked salmon
2 large eggs
100 ml of heavy cream
50 grams of grated Parmesan cheese
1 clove of garlic, minced
Freshly ground black pepper to taste
Fresh dill or chives (optional)
Instructions
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about ½ cup of the pasta water and then drain the rest.
In a bowl, whisk together the eggs, heavy cream, and Parmesan cheese.
In a pan over low heat, add a drizzle of olive oil and sauté the minced garlic just until fragrant.
Toss in the smoked salmon and let it warm gently.
Add the drained spaghetti straight into the pan with the salmon and garlic. Pour the cream mixture over the pasta, and toss gently to combine. Use the reserved pasta water a little at a time to help create a silky sauce.
Season with black pepper and adjust with more cheese if desired. If the dish looks too dry, add more pasta water.
Plate it up, sprinkle with fresh dill or chives, and serve.
