Ingredients

  • 200 grams of spaghetti
  • 150 grams of smoked salmon
  • 2 large eggs
  • 100 ml of heavy cream
  • 50 grams of grated Parmesan cheese
  • 1 clove of garlic, minced
  • Freshly ground black pepper to taste
  • Fresh dill or chives (optional)

  • Instructions

  • In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about ½ cup of the pasta water and then drain the rest.
  • In a bowl, whisk together the eggs, heavy cream, and Parmesan cheese.
  • In a pan over low heat, add a drizzle of olive oil and sauté the minced garlic just until fragrant.
  • Toss in the smoked salmon and let it warm gently.
  • Add the drained spaghetti straight into the pan with the salmon and garlic. Pour the cream mixture over the pasta, and toss gently to combine. Use the reserved pasta water a little at a time to help create a silky sauce.
  • Season with black pepper and adjust with more cheese if desired. If the dish looks too dry, add more pasta water.
  • Plate it up, sprinkle with fresh dill or chives, and serve.
