6 large eggs
3 oz smoked salmon
2 tbsp cream cheese
1 tbsp mayonnaise
1 tsp Dijon mustard
1 tbsp fresh chives, finely chopped
Salt and pepper to taste
Paprika for garnish
Instructions
Start by placing the eggs in a saucepan and cover them with cold water. Make sure there’s about an inch of water above the eggs. Bring it to a rolling boil over medium-high heat.
Once boiling, cover the pan and remove it from heat. Let the eggs sit for about 12-15 minutes.
After they’re done, carefully transfer the eggs to an ice bath to stop the cooking process. Let them cool completely for about 10 minutes.
Once cooled, peel the eggs and slice them in half lengthwise. Gently scoop the yolks into a mixing bowl, and set the egg whites aside on a serving platter.
To the yolks, add the smoked salmon, cream cheese, mayonnaise, Dijon mustard, and chives. Season with salt and pepper. Mash everything together with a fork or use a hand mixer.
Spoon the filling back into the egg whites or use a piping bag for a fancier look. Sprinkle with paprika and any extra garnishes you desire.
Serve immediately.
