  • Instructions

  • Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  • In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs. Whisk until the mixture is smooth and well-blended.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Fold in the chopped pecans and shredded coconut gently until evenly distributed throughout the batter.
  • Pour the batter into your prepared baking pan, spreading it evenly with a spatula.
