  • 2 eggs, beaten
  • ½ cup chopped pecans (optional)
  • 1 cup mini marshmallows (optional)
  • Fresh mint leaves (for garnish)
  • Toasted coconut flakes (for garnish)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Peel and chop the sweet potatoes into chunks. Boil them for about 15-20 minutes or until they are fork-tender. Drain and mash in a mixing bowl.
  • Add melted butter, maple syrup, brown sugar, cinnamon, nutmeg, vanilla extract, and beaten eggs to the mashed sweet potatoes. Mix until smooth.
  • Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
  • If desired, mix chopped pecans and sprinkle over the top of the sweet potato base.
  • Bake for 30-35 minutes or until the top is golden brown.
  • Remove from oven and cool for about 10 minutes before serving warm.
