Juice of 1 lime

Instructions
Begin by preparing the brown rice according to package instructions, using vegetable broth instead of water for extra flavor.
In a large skillet over medium heat, add a splash of olive oil. Add the chopped onion and cook until translucent, about 5 minutes. Mix in the minced garlic and sauté for an additional minute.
Stir in the diced sweet potatoes and cook for about 8-10 minutes, until they begin to soften, stirring occasionally.
