2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
3 medium potatoes, peeled and diced
1 large carrot, diced
1 bell pepper, chopped
200g chorizo, sliced
4 cups chicken or vegetable broth
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 3-4 minutes until they soften.
Toss in the sliced chorizo, allowing it to brown slightly and release its flavors, around 5-6 minutes.
Stir in the diced potatoes, smoked paprika, and pour in the broth. Bring the mixture to a boil.
Reduce the heat to low and simmer for about 20-25 minutes or until the potatoes are tender.
For a creamier consistency, you can blend a portion of the soup using an immersion blender at this stage.
Taste and season with salt and pepper as necessary.
Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
