Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 large carrot, diced
  • 1 bell pepper, chopped
  • 200g chorizo, sliced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

  • Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 3-4 minutes until they soften.
  • Toss in the sliced chorizo, allowing it to brown slightly and release its flavors, around 5-6 minutes.
  • Stir in the diced potatoes, smoked paprika, and pour in the broth. Bring the mixture to a boil.
  • Reduce the heat to low and simmer for about 20-25 minutes or until the potatoes are tender.
  • For a creamier consistency, you can blend a portion of the soup using an immersion blender at this stage.
  • Taste and season with salt and pepper as necessary.
  • Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
