  • 3 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cinnamon
  • 1 teaspoon Thyme
  • 2 cloves Garlic (minced)
  • 1 tablespoon Lemon Juice
  • Fresh Thyme (for garnish)

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels, then season them with salt, pepper, paprika, cinnamon, and thyme.
  • In a bowl, combine olive oil, minced garlic, and lemon juice. Toss the seasoned chicken in this mixture until well coated.
  • Core the apples and cut them into wedges. Slice the onion into rings.
  • In a large baking dish, place the marinated chicken thighs in the center, surrounded by apple wedges and onion rings. Drizzle any remaining marinade over the top.
  • Cover the dish with aluminum foil and roast for 25-30 minutes. Remove the foil for the last 10 minutes to get a nice golden brown on the chicken.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C).
  • Once done, let it rest for a few minutes before serving. Garnish with fresh thyme or parsley and serve warm.
