4 pieces Chicken Thighs
2 medium-sized Apples (Granny Smith or Honeycrisp)
1 large Onion (sweet, Vidalia or yellow)
3 tablespoons Olive Oil
1 teaspoon Salt
1 teaspoon Black Pepper
1 teaspoon Paprika
1 teaspoon Cinnamon
1 teaspoon Thyme
2 cloves Garlic (minced)
1 tablespoon Lemon Juice
Fresh Thyme (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels, then season them with salt, pepper, paprika, cinnamon, and thyme.
In a bowl, combine olive oil, minced garlic, and lemon juice. Toss the seasoned chicken in this mixture until well coated.
Core the apples and cut them into wedges. Slice the onion into rings.
In a large baking dish, place the marinated chicken thighs in the center, surrounded by apple wedges and onion rings. Drizzle any remaining marinade over the top.
Cover the dish with aluminum foil and roast for 25-30 minutes. Remove the foil for the last 10 minutes to get a nice golden brown on the chicken.
Ensure the chicken reaches an internal temperature of 165°F (74°C).
Once done, let it rest for a few minutes before serving. Garnish with fresh thyme or parsley and serve warm.
