Ingredients

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1/4 cup Brown Sugar
  • 1 teaspoon Cinnamon

  • Salt and Pepper, to taste
  • 2 tablespoons Olive Oil
  • 1 teaspoon Ginger, grated (optional)
  • a pinch of Red Pepper Flakes (optional)
  • 1 Apple, diced (optional)

  • Instructions

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the fresh cranberries, stirring to combine with the sautéed onions and garlic. Cook for 2 to 3 minutes until the cranberries start to soften.
  • Pour in the vegetable broth, followed by brown sugar, cinnamon, nutmeg, salt, and pepper. Stir well to combine.
  • Bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes, or until the cranberries have burst and softened.
  • Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend partially.
  • Taste your soup and adjust the seasoning, adding more salt, pepper, or brown sugar if needed.
  • Ladle the soup into bowls and garnish as desired.
