  • 4 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Fresh thyme (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • Vegetables (carrots, potatoes) (optional)
  • Chopped parsley (for garnish)
  • Extra orange slices (for serving)

  • Instructions

  • Preheat the oven to 425°F (220°C).
  • Remove any giblets from inside the chicken, rinse under cool water, and pat dry.
  • In a small bowl, combine minced garlic, olive oil, cinnamon, cumin, nutmeg, salt, and pepper.
  • Rub the spice mixture all over the chicken, ensuring to get under the skin.
  • Cut one orange into quarters and place inside the chicken cavity. Slice the second orange for garnish.
  • Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 10-15 minutes before carving.
