2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 cup unsalted butter (cold, cubed)
1 cup canned pumpkin puree
1/2 cup heavy cream
1 teaspoon vanilla extract
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
In another bowl, combine the pumpkin puree, heavy cream, and vanilla extract. Pour this mixture into the dry ingredients and stir gently until just combined.
Turn the dough onto a lightly floured surface. Gently press it into a disc about 1 to 1.5 inches thick. Cut into wedges or use a round cutter for a uniform shape.
