  • 4 cups chicken broth
  • 1 can (4 oz.) diced green chilies
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Optional: red pepper flakes or diced jalapeños for spice
  • Optional: firm tofu or additional beans for vegetarian option
  • Garnishes: chopped green onions, fresh cilantro, sour cream or Greek yogurt

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and sauté until fragrant, about 1 minute.
  • Add the chicken breasts to the pot, seasoning with salt, pepper, and Cajun seasoning. Cook until the chicken is browned on both sides, about 5 minutes.
  • Pour in the chicken broth and add the green chilies and white beans. Stir well to combine and bring everything to a boil.
  • Reduce the heat to low, cover the pot, and let simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the pot and stir to combine.
  • Adjust seasoning if necessary and let the chili simmer for an additional 5 minutes to let the flavors meld.
