1 lb. boneless, skinless chicken breasts
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 can (15 oz.) white beans (like cannellini or great northern)
4 cups chicken broth
1 can (4 oz.) diced green chilies
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
Salt and pepper, to taste
Optional: red pepper flakes or diced jalapeños for spice
Optional: firm tofu or additional beans for vegetarian option
Garnishes: chopped green onions, fresh cilantro, sour cream or Greek yogurt
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
Stir in the minced garlic and sauté until fragrant, about 1 minute.
Add the chicken breasts to the pot, seasoning with salt, pepper, and Cajun seasoning. Cook until the chicken is browned on both sides, about 5 minutes.
Pour in the chicken broth and add the green chilies and white beans. Stir well to combine and bring everything to a boil.
Reduce the heat to low, cover the pot, and let simmer for 20-25 minutes, or until the chicken is cooked through and tender.
Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the pot and stir to combine.
Adjust seasoning if necessary and let the chili simmer for an additional 5 minutes to let the flavors meld.
