500g Chicken thighs
1/4 cup Maple syrup
2 tablespoons Soy sauce
4 cloves Garlic, minced
1 teaspoon Ground ginger
1–2 teaspoons Chili flakes or sriracha
1 cup Coconut milk
1 cup Jasmine rice
Fresh cilantro, for garnish
Instructions
Marinate the chicken: In a mixing bowl, combine the chicken, maple syrup, soy sauce, minced garlic, ground ginger, and chili flakes/sriracha. Mix well, ensuring the chicken is evenly coated. Let it marinate for at least 30 minutes or overnight for maximum flavor.
Prepare the rice: Rinse the jasmine rice under cold water until the water runs clear. Combine the rice with coconut milk and 1 cup of water in a pot. Bring it to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and let it rest while you cook the chicken.
