2 cups sushi rice
2 ½ cups water
1 pound sushi-grade salmon
¼ cup mayonnaise
3 tablespoons sriracha
1 tablespoon soy sauce
1 teaspoon sesame oil
1 green onion (sliced)

Instructions
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water and bring it to a boil over medium heat. Once boiling, reduce the heat, cover, and let it simmer for about 20 minutes until all the water is absorbed. Fluff it with a fork, and allow it to cool slightly.
While the rice cools, chop the sushi-grade salmon into bite-sized pieces. In a bowl, mix the salmon with mayonnaise, sriracha, soy sauce, and sesame oil. Give it a good stir until all the salmon is coated; you want it to be a delicious, creamy mix.
Preheat your oven to 350°F (175°C). Pour the slightly cooled rice into a baking dish (around 9×13 inches works nicely). Using a spatula, spread the rice evenly. Then, layer the salmon mixture generously on top.
Pop the dish into the preheated oven and bake for about 25-30 minutes. The top should be bubbling and slightly golden.
