1 cup fresh spinach (chopped)
1 cup sharp cheddar cheese (shredded)
1 ½ cups all-purpose flour
2 tablespoons baking powder
½ teaspoon salt
½ cup milk
2 large eggs
¼ cup vegetable oil
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.
In a large bowl, whisk together the flour, baking powder, and salt until well combined.
In another bowl, beat the eggs, then add the milk and vegetable oil. Mix until smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; don’t over-mix!
Fold in the chopped spinach and shredded cheddar cheese, distributing them evenly throughout the batter.
Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
Let the muffins cool in the tin for five minutes before transferring them to a wire rack to cool completely.
