2 cups fresh spinach (chopped)
1 cup feta cheese (crumbled)
1 cup breadcrumbs (preferably whole wheat)
1 large onion (finely chopped)
2 cloves garlic (minced)
2 large eggs (beaten)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano
Olive oil (for frying or baking)
Instructions
Rinse the fresh spinach under cold water to remove dirt. Drain well and thoroughly chop it.
In a medium skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant (about 3-5 minutes). Set aside to cool.
In a large mixing bowl, combine the cooked spinach, sautéed onion and garlic, crumbled feta cheese, breadcrumbs, eggs, salt, pepper, and oregano. Mix well until all ingredients are fully incorporated.
Using your hands, take small portions (about 2 tablespoons each) and shape them into round patties, aiming for a thickness of about half an inch.
To bake: Preheat your oven to 375°F (190°C), place the patties on a lined baking sheet, drizzle with olive oil, and bake for about 20-25 minutes, flipping halfway, until golden brown. To pan-fry: Heat a couple of tablespoons of olive oil in a skillet over medium heat and cook the patties for about 3-4 minutes on each side until crispy and golden.
