Discover a delicious Savory Spinach Feta Stuffed Salmon Pinwheels recipe Perfect for impressing guests with a quick and easy gourmet dish
Ingredients
Scale
4 salmon fillets (skinless, boneless)
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup cream cheese, softened
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
Fresh dill or parsley for garnish (optional)
Instructions
In a medium bowl, mix the chopped spinach, crumbled feta, cream cheese, minced garlic, olive oil, lemon juice, salt, and pepper. Stir it well to combine all the flavors. This filling is what makes the pinwheels so creamy and delicious!
Take your salmon fillets and place them between two pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound the fillets until they are about 1/2 inch thick. This step not only tenderizes the salmon but also makes it easier to roll.
Spread an even layer of the spinach and feta filling onto each salmon fillet, leaving a small border around the edges. Starting from one end, carefully roll the fillet away from you, creating a tight pinwheel. Secure the pinwheel by tying it with kitchen twine or simply using toothpicks to hold it in place.
Heat a skillet over medium heat and add a drizzle of olive oil. Once the oil is hot, place the salmon pinwheels in the skillet and cook for about 5-7 minutes on each side, or until the salmon is cooked through and golden brown. Be gentle while flipping them to keep the filling inside.
Once cooked, remove the pinwheels from the skillet and let them rest for a few minutes. Slice them into rounds and arrange on a plate. If you’re feeling fancy, garnish with fresh dill or parsley for a pop of color!
