1 onion, chopped
2 cloves of garlic, minced
3 cups of vegetable broth
1 small zucchini, diced
1 cup of green beans, trimmed and cut
1 cup of peas (fresh or frozen)
2 cups of kale or spinach, chopped
Salt and pepper to taste
Fresh basil leaves
1 tablespoon of lemon juice
Instructions
Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until it becomes translucent. Then, toss in the minced garlic and sauté for another minute.
Add the broth: Pour in the vegetable broth and bring it to a gentle simmer.
