  • 2 pounds of yellow squash, sliced
  • 1 medium onion, diced
  • 2 cups of shredded cheddar cheese
  • 1 cup of sour cream
  • 1 cup of breadcrumbs (preferably seasoned)
  • 2 large eggs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 2 tablespoons of olive oil
  • Optional: chopped parsley for garnish

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then, add the sliced yellow squash and continue to cook for an additional 5-7 minutes until tender.
  • In a large mixing bowl, combine the sautéed vegetables with shredded cheddar cheese, sour cream, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix well until combined.
  • Grease a 9×13 inch baking dish with cooking spray. Pour the mixture into the dish, spreading it evenly.
  • Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the casserole is bubbling.
  • Let it cool for a few minutes, then garnish with chopped parsley before serving.
