2 medium-sized yellow squash (about 4 cups diced)
2 medium-sized zucchini (about 4 cups diced)
1 medium onion (finely chopped)
2 cloves of garlic (minced)
1 cup of shredded cheddar cheese
1 can of cream of mushroom soup
1 cup of chicken or vegetable broth
1 package of stuffing mix
1/2 cup of butter (melted)
Salt and pepper (to taste)
Optional herbs (dried thyme or parsley)
Instructions
Prepare the Squash: Wash and dice the yellow squash and zucchini into bite-sized pieces.
Sauté the Veggies: In a large skillet over medium heat, melt a tablespoon of butter and add the chopped onion. Sauté until translucent, then stir in the minced garlic. Add the diced squash and zucchini, cooking until tender while seasoning with salt and pepper.
Mix the Casserole Base: In a mixing bowl, combine the sautéed veggies with the cream of mushroom soup and chicken broth. Add the shredded cheddar cheese and mix until coated.
Prepare the Stuffing: In another bowl, mix the stuffing with the melted butter and a bit of broth for moisture. Combine well.
