  • 1 cup white rice
  • 8 oz queso cheese
  • 1 cup bell peppers (diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Spices (cumin, chili powder, salt, and pepper)
  • 1 cup black beans (optional)
  • Jalapeños (to taste, optional)
  • Avocado slices (optional)
  • Cilantro (for garnish, optional)
  • Fresh lime wedges (for garnish, optional)
  • Sour cream (for garnish, optional)
  • Chopped green onions (for garnish, optional)

  • Instructions

  • Rinse the white rice under cold water until the water runs clear. Cook it according to package instructions and set aside.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add diced onion and bell peppers, stir until softened.
  • In the same skillet, add remaining olive oil and increase heat to high. Season steak with spices and sear for 3-4 minutes on each side for medium-rare.
  • Lower heat and stir in queso cheese until melted. If needed, add a splash of milk for smoothness.
  • Slice rested steak into strips. In a large bowl, combine cooked rice, sautéed vegetables, sliced steak, and warm queso cheese.
