1 lb steak (sirloin or flank)
1 cup white rice
8 oz queso cheese
1 cup bell peppers (diced)
1 onion (diced)
2 cloves garlic (minced)
2 tablespoons olive oil
Spices (cumin, chili powder, salt, and pepper)
1 cup black beans (optional)
Jalapeños (to taste, optional)
Avocado slices (optional)
Cilantro (for garnish, optional)
Fresh lime wedges (for garnish, optional)
Sour cream (for garnish, optional)
Chopped green onions (for garnish, optional)
Instructions
Rinse the white rice under cold water until the water runs clear. Cook it according to package instructions and set aside.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add diced onion and bell peppers, stir until softened.
In the same skillet, add remaining olive oil and increase heat to high. Season steak with spices and sear for 3-4 minutes on each side for medium-rare.
Lower heat and stir in queso cheese until melted. If needed, add a splash of milk for smoothness.
Slice rested steak into strips. In a large bowl, combine cooked rice, sautéed vegetables, sliced steak, and warm queso cheese.
