Ingredients

  • 2 cups of rolled oats
  • 1 cup of all-purpose flour
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter, melted
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of fresh strawberries, chopped
  • Optional: 1/2 cup of chopped nuts
  • Optional: 1/2 teaspoon of cinnamon
  • Optional: 1/4 cup of honey or maple syrup

  • Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, combine the oats, flour, brown sugar, and salt. Mix well.
  • Add in the melted butter and vanilla extract. Stir until everything is just combined.
  • Take half of the mixture and press it evenly into the bottom of your prepared pan.
  • In a separate bowl, toss the chopped strawberries with a spoonful of sugar.
  • Layer the strawberries on top of the crust.
  • Sprinkle the remaining oatmeal mixture over the strawberries. Press it down gently.
  • Bake for about 30-35 minutes or until the edges are golden brown and the strawberries are bubbling.
  • Let it cool completely before slicing into bars.
