2 cups of rolled oats
1 cup of all-purpose flour
1/2 cup of brown sugar
1/2 teaspoon of salt
1/2 cup of unsalted butter, melted
1 teaspoon of vanilla extract
1 1/2 cups of fresh strawberries, chopped
Optional: 1/2 cup of chopped nuts
Optional: 1/2 teaspoon of cinnamon
Optional: 1/4 cup of honey or maple syrup
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, combine the oats, flour, brown sugar, and salt. Mix well.
Add in the melted butter and vanilla extract. Stir until everything is just combined.
Take half of the mixture and press it evenly into the bottom of your prepared pan.
In a separate bowl, toss the chopped strawberries with a spoonful of sugar.
Layer the strawberries on top of the crust.
Sprinkle the remaining oatmeal mixture over the strawberries. Press it down gently.
Bake for about 30-35 minutes or until the edges are golden brown and the strawberries are bubbling.
Let it cool completely before slicing into bars.
