Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk them together until they are well mixed.
- Add the softened butter to the dry ingredients and beat with an electric mixer until the mixture resembles coarse crumbs, about 2 minutes.
- Mix in buttermilk, eggs, and vanilla extract. Beat on medium speed for about 2–3 minutes until it’s smooth.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- While your cake is cooling, create the frosting. In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar and mix on low speed. Pour in milk and vanilla extract, followed by the pureed strawberries, and beat until smooth and fluffy.
- Once the cake has cooled completely, spread the frosting evenly on top.
