  • 2 cups of fresh strawberries (sliced)
  • 2 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 1 cup of heavy whipping cream
  • 1/4 cup of powdered sugar
  • 1 teaspoon of vanilla extract

  • Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter and mix until it resembles coarse crumbs.
  • Pour in the milk and vanilla extract and mix until just combined. Don't overmix!
  • Spread the batter into your prepared baking pan, smoothing it into the corners.
  • Bake for 25-30 minutes, until golden brown and a toothpick comes out clean.
  • While the shortcake cools, toss sliced strawberries with sugar and lemon juice and let sit.
  • In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
  • Once the shortcake has cooled completely, remove it from the pan and cut into squares. Layer with strawberries and whipped cream.
