Ingredients

  • 4 cups Fresh corn kernels, grilled or boiled
  • 8 oz Cream cheese
  • 2 cups Shredded Monterey Jack cheese
  • 12 Jalapeños, diced
  • 1/4 cup Lime juice
  • 1/4 cup Cilantro, chopped
  • 1 tsp Garlic powder
  • Salt & pepper to taste
  • Optional: Crumbled feta or Cotija cheese, Smoked paprika, Chopped green onions

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the corn kernels, cream cheese, and shredded Monterey Jack cheese. Mix well.
  • Add the diced jalapeños, lime juice, chopped cilantro, garlic powder, salt, and pepper. Stir until well incorporated.
  • Pour the mixture into an oven-safe baking dish and spread evenly.
  • Bake for about 20 minutes or until bubbly and golden.
  • Remove from the oven and let cool for a few minutes.
  • Top with additional cilantro, chili powder, and serve immediately with tortilla chips.
